Thanks for the feedback. Currently, double-click opens a photo in Loupe layout mode or a scene in Scenes layout mode. If you right-click and choose “Open in Default App…“ it will open it in the same app as if you double-clicked it in the Finder. You can follow this guide to change the default app to the Pixelmator Pro https://discussions.apple.com/thread/254391197?sortBy=rank.
Ideally, users like to edit all the selected photos after culling is done, and for that, an export to App feature is there, which you can configure to open Pixelmator Pro or any other App. You can select the App in the Settings → Export tab → … and select the App you want a particular export entry to open.

I will add a keyboard shortcut for the same. But in the meantime, you can assign a keyboard shortcut using macOS shortcut override as given in https://support.apple.com/en-in/guide/mac-help/mchlp2271/mac.
